Our Whisky & Rum

At Tin Shed, we pride ourselves on producing artisan whiskies and rums that do not disappoint.

Our focus is always on flavour rather than efficiency. Everything is done by hand with meticulous attention to detail and quality. We use local grain, local peat and local Mallee stumps to smoke our whisky. We do not chill-filter our whiskies or rums, so it is quite common to see some flocculation in the bottle (give it a good shake and it will dissolve again). 

Our coopers are South Australian and source the best oak for our casks. We know this because they drink our spirits and insist on drinking only the best quality whisky and rum!

Whisky and rum making is an art; it requires good quality ingredients, good oak, skill and, finally, enough time in the right environment to produce the depth and richness of flavour we strive for in our spirits. We aim to produce a masterpiece each time; a whisky or rum that will entice, tease and satisfy the most discerning palate and deliver enjoyment with every sip.

Palate: Orange marmalade with spicy cinnamon, baked apple, chocolate, licorice, lemon curd and candy.

Finish: long with sweet marmalade the dominating impression

Comment:  Delightfully gentle whisky with well-rounded mouth feel and subtlty that is reminiscent of batch 014, just not quite as soft.

Tasting Notes

Nose: Molasses, grass, caramel, cherry blossom, dark chocolate coated orange candy, orange peel and marmalade.

Palate:  Seville orange with matcha Japanese green tea bitterness and chocolate

Finish:  The finish is reasonably long. What starts out as a duel between the sweetness of the port and the influence of the oak finished up as a waltz, or maybe a tango!

Comment: This is a rum for grown-ups. The sickly sweetness so common in commercial rums is missing, so too the presence of added spices. It is smart, graceful and sophisticated.

Tasting Notes

Nose: Spices – cloves and nutmeg, oak, dried grass, rum'n-raisin ice cream, caramel, apricot jam, gooseberry pie, damp (coniferous) forest floor and pine cones; adding water brings out truffles over vanilla ice cream

Palate: some warmth, just enough to know your drinking at 46%; spices again with a subtle pleasant toffee sweetness; chilli chocolate; becomes creamy with a hint of eucalyptus when water added.

Finish: Burnt toffee brittle on the finish before cough sweets, honey and a lingering spice finish with more cinnamon and cloves 

Balance:  swings like a pendulum to start with, but finishes nicely in the middle.
