Our Whisky

At Tin Shed, we pride ourselves on producing artisan whiskies that do not disappoint.

Our focus is always on flavour rather than efficiency. Everything is done by hand with meticulous attention to detail and quality. We use local grain, local peat and local Mallee stumps to smoke it. We do not chill-filter our whiskies, so it is quite common to see some flocculation in the bottle (give it a good shake and it will dissolve again). 

Our coopers are South Australian and source the best oak for our casks. We know this because they drink our whiskies and insist on drinking only the best quality whisky!

Whisky making is an art; it requires good quality ingredients, good oak, skill and, finally, enough time in the right environment to produce the depth and richness of flavour we strive for in our whiskies. We aim to produce a masterpiece each time; a whisky that will entice, tease and satisfy the most discerning palate and deliver enjoyment with every sip.

Tasting Notes

Nose: Forest floor, a whiff of pine needles, eucalyptus, menthol, thymol, Manuka honey on sour fruit compote (plums and apricots), something woody like redgum and/or silky oak and a whiff of shellac: pleasantly reminiscent of a woodworking class in high school.

Palate: Generous, rich and fruity and then ferny and oaky, apricot and peach savoury tart with wintergreen and sage.

Tasting Notes

Colour: Autumn brown with claret ash and orange nasturtium highlights

Nose:  Roasted hazelnut and toasted almond nuttiness with apricots, some cinnamon, autumn leaves, mixed apricot/peach fruit leather, medium dry sherry, a hint of wood-smoke and chocolate covered fruit. Quite perfumed like scented soap (Camay) with a hint of rosewater and cedar/sandalwood and tobacco leaf.

Palate: Medium dry with fruit leather, sherried fruit cake and some woody herbs, autumn leaf tannins in the mid through back palate along with some warm spiciness.

Finish: leafy tannins, some aromatic bitters, long and warming, drying wood and that tannic leafiness hangs aroundfor a while.         

Comment: Sophisticated and elegant with lots of interesting things going on in the nose; the palate and finish are perfectly aligned with the nose.

Tasting Notes

Nose: Fruity with warm brioche and mixed berry jam, then plum pudding. Lots of toffee, some lifted ethereal alcohol, fruchocs morphing into carob coated plums, sherry wood, some leather, toast and some earthy peat. Very well balanced between the gentle peat, the carob coated plums, the leather and a medley of mint toffee, crème brulee and crème caramel, especially retro-nasally. The longer it’s left to develop the more obvious the port wood influence becomes.

Palate: Big, mouth coating, silky, a whack of sweet mint toffee and wintergreen with a decent dash of slightly sour and astringent woody herb (rosemary) and some cassia bark, toasty oak, buttered warm spiced fruit loaf, then some menthol or eucalyptus which gets very well integrated with the wintergreen and rosemary.

Finish: Long, warming and woody (mallee root), some drying peat, leather and refreshing bitter leaves (endive, witlof and rocket). The smouldering woodiness is persistent.

Comment:  The balance in the nose is exemplary, yet nothing in the nose prepares you for the first sip: It’s like jumping off a cliff into a lake and the finish is long and refreshingly bitter with some smoked and charred wood in there as well. Apart from a moment in the initial nosing the alcohol never makes its presence felt nor is it intrusive.

Having been previously frustrated by our spirit’s ability to absorb peat smoke, we smoked the barley in the barrel so much that we feared we may have overdone it, consequently we have watched the journey of this particular spirit with intense interest.  At 3 months of age it was all smoke, at 6 months, smoke with some honey; at 12 months, more honey, at 18 months it was like licking a spoon full of honey with a hint of smoke in the background.  At 2 years it had transformed completelyand tasted very ordinary, a confused mix of flavours that was totally out of balance.  Now, 3 months short of its 3rd birthday it has changed again and is one of the most interesting, best balanced and challenging whiskies we have produced.

Tasting Notes

Colour: Rich and inviting orange brown.

Nose: Fruity, herbal with roast meat and lots of rancio, charred wood and faint smoked paprika, then eucalyptus, mint and cedar/pine needles.

Palate: Rich, rounded, smoky then slightly minty, fruity and oily, all gently wood smoked.

Finish: Drying fruit and charred wood and a fading smokiness. Charred wood.   

Comment: The richness is typical and the smoke isn’t obvious in the nose, yet builds to show up most in the tail of the palate and in the finish as distant campfire smoke.

Finish: Nutty and chalky/papery, a little woody, warming and the nuttiness hangs around for ever

Comment: Possibly our best effort to date, at least to my palate.  An absolute cracker!

Tasting Notes

Nose: Christmas cake and brandy pudding, lifted alcohol, macerated fruits, especially sultanas and raisins, stewed apricots and some orange peel. Some sandalwood and dry mint. Slightly nutty. Hints of varnish and French polish and dusty oak. The alcohol gets more ethereal and with some marshmallow or nougat. Lovely freshness, clarity and depth, good development over time.

Palate: Rich, sweet and sour plums, nuttiness with a spirit bite; very warming, some slightly astringent green herbs. Medium dry sherry.

Finish: Some sour fruits and dusty oak, warming alcohol. Wood bitters.

Comment: The balance is good with the nose the star of the show. The finish is nice with quite a long tail and some cleansing bitterness.

Tasting Notes

Colour: Lovely clear autumn red brown – colour rating 5.

Nose: Mint toffee, wood-smoke, mixed apricots and apricot fruit leather, dried cherries, nuttiness, some leather, then smoked almonds, then some wine gums and violets; gets smokier and the usual thymol/eucalyptus puts in a late but welcome appearance.

Palate: Sweet peat and peanuts, much smokier than the nose; charry ashes, smoked mint toffee; gets much smokier in the palate, sweet and leathery, nutty; smoked apricot jam.

Finish: Charred paper and leather, nutty, mint toffee and roasted nuts; quite smoky.

Comment: The early nose was less smoky than later on. The palate is full on smoked nuts. A unique mix of mint/eucalyptus and smoked nuts.

Tasting Notes

Colour: Lovely red/brown colour

Nose:  Vanilla, coconut, apricots; no obvious hot alcohol, red berries, lifted alcohol, more toffee apple and red berries such as cranberries and red currants and the menthol/thyme/eucalyptus trio kick in as ‘Throaties’ cough lollies. Finally, minty and nutty apricot with chocolate (with mint and apricot dominating) as the alcohol gets more forward the minty character intensifies

Palate: Warm, minty, fruity (apricot jam) and nutty with solid alcohol (and more chocolate).

Finish: Toffee dark chocolate, roasted nuts and mixed dried fruits, warming, slightly herbal, nutty, fruit & nuts chocolate and fruit leather that hangs around.

Comment: Lots of interesting and positive things going on. The higher proof cranks up the red fruits and the chocolate and the ether/acetone.

Tasting Notes

Colour: Autumn leaf red orange highlights – colour rating 5.5.

Nose:  Distant but immediately discernible autumn leave and fir wood smoke with pine needles, along with vanilla and apricots and then the eucalyptus/thyme/menthol/mint kick in

Palate: Good mouth feel, rounded, fruity and well balanced, slightly nutty, good solid alcohol with no unexpected heat, good tannins.

Finish: Lively fruity (apricots) and something minty and nutty and some burnt notes and those characteristics remain solid

Comment: A lovely, well balanced package that spells Autumn for me and the after taste just keeps on keeping on. Lovely stuff.

The malt was smoked using peat from the Parawa area south of Adelaide and classic South Australian mallee wood.

This whisky is a winter warmer, but it is definitely at its best after being warmed in the hand.  Don't make the mistake of drinking it cold or on ice.

Nose:

Varnish, shoe polish, nutmeg, slight hint of soot, coffee cream biscuit, caramel, ginger, woody herbs (rosemary and thyme). Gets more cut pine and spice over time.

Palate:

Big, sweet, herby and woody, nuts and spices (nutmeg, cinnamon, allspice), pine and cream.

Finish:

Warm and slightly sour, typically Australian. Pine wood with a slightly tannic tail.

Comment:

Good even package, everything melds together well. The whole is greater than the sum of the parts.

COLOUR
Amber gold with orange highlights –colour  rating 5.3

NOSE
Honey, slightly unripe stone fruit, toasted oats, buttered popcorn, malty and dusty, hessian (like wheat bags or calico/flax). Coconut macaroons with golden syrup, then gets more minty/herby. The fruit notes (pears and peaches) along with the coconut really develop. Some chalk and fresh paint/emulsion, especially in the near empty glass.

PALATE
Full and rich, nice mouthfeel, very rounded and syrupy, slightly like molasses. Sweet, mint toffee and fresh peach, honey on toast, then minty wood, sour fruit and nuttiness.

FINISH
Warming, long, nutty and herbal, gets woody and slightly bitter. Most intriguing with the good development in the glass over time. Good depth.

COMMENT
Moreish.

COLOUR
Dark amber with reddish brown highlights – colour rating 5.8.

NOSE
Slightly musty, some dust, then classic candied orange, some mint toffee, apricot fruit leather, dried peaches and gets more sherry and more herbal (eucalyptus, rosemary and mint). Mint toffee and fruit leather.

PALATE
Full and rich mouthfeel, herbs and honey, redcurrant jelly, then woody (pencil shavings) and Dutch Licorice.

FINISH
Dry, some toffee, herbal honey and bitters. Some coffee. Gets a little papery and woody. The nose is interesting and progressive.

COMMENT
Every bit as good as Batch No. 001, same age, same oak regime, just different.

Tasting Notes

COLOUR
Dark amber with red brown autumnal highlights.

NOSE
Mint toffee, pine needles, stone dust, wine gums, honey on toast, blackberry jam. Warm spices (ginger, cinnamon and nutmeg). Wood polish and a creamy leather conditioner.

PALATE
Full and rich mouthfeel, syrupy with ginger cake, mixed peel, orange marmalade. Fruity sweet, quite woody with jam and a slightly sour fruit note in the back palate, some wood shavings.

FINISH
Some sour fruit and ginger jam then spice (nutmeg and cinnamon), warming and slightly woody, more toffee and sour fruit. Drying, minty wood in the tail. Nicely balanced.

COMMENT
You can tell this is non-chill filtered because quite a few bottles show sediment. Shake the bottle and it dissolves. A thoroughly delightful whisky that is far too easy to drink.
